Lemon chicken with orzo pasta

Here’s a wonderfully healthy mid-week meal that’s tangy and hearty at the same time. Buy a couple chicken breasts and cube them into bite-sized pieces and, after browning, dinner is ready in about 30 minutes.

Ingredients

2 chicken breasts, cubed

1 shallot, diced

1 C orzo pasta

2 1/4 C chicken broth

Handful of cherry tomatoes, halved

1 package spinach

6 mushrooms, sliced

2 lemons, zested and juiced

Basil, diced

To Do

Season the cubed chicken with garlic salt. Heat oil in a pan and add the chicken. Cook, stirring, until lightly browned on all sides (do not overcook).

Removed the chicken. Add more oil to the pan and when hot, add diced shallots. After maybe a minute, add the uncooked orzo and stir for a minute.

Add the brother. Boil. Cover and simmer for 7 minutes.

Add the toms, spinach and shrooms and cook until wilted.

Add the lemon juice, basil and cook for maybe 2 minutes.

Add the chicken back in with the lemon zest and cook through.
